Flat bread with Black Garlic Spread and Serrano Ham

You can use whatever you want to cover this bread – olives, salsas, mushrooms, meat, cheeses, different vegetables and fishes. You should only have something juicy, salty, sour and sweet at the same time. It fits perfect with wine! You can also replace flatbread with the one from the store, so you can get it faster.

 Flatbread:

Quantity – 1 pc, for 4 people
Cooking time – 45 minutes

Flatbread:

200 ml flour
0,5 tsp baking powder
0,5 tsp soda
0,5 tsp salt
50 ml water
50 ml sour cream
1 tsp mild flavored olive oilMix flour, baking powder, salt and soda and a sieve in a bowl. Make a cavity in the middle of the solids and pour water, sour cream and oil into it. Mix it smooth and place on a floury table. Knead until the dough is even and tough. Shape the ball and leave for 15 minutes under a damp towel. Press 0.5 cm thick flat bread of the dough. Place it on baking tray covered with baking paper, make some small holes with a fork and bake at 225 degrees in the oven for 10 minutes.

Black Garlic spread

4 tsp roasted seed mixture (e.g. sunflower, pumpkin, sesame)
75 g Black Garlic
1 tsp olive oli
salt, pepper

Roast the seeds on a hot pan until they are golden brown. Then grind them finely and blend in a mortar with salt, pepper, oil and garlic cloves to get a smooth paste.

Topping:

a handful of rucola
50 g Serrano ham
a handful of grapes
a handful of cherry tomatoes
1 small red onion
some large capers
1-2 tsp roasted seed mixture
50 g flavored cream cheese
olive oilSpread cream cheese and 2-3 tsp of Black Garlic paste the flatbread. Cover it with rucola, ham slices, grapes, split tomatoes, onion slices, capers and seeds. Drip some good olive oil on top of it. Serve immediately.
