How can Black Garlic have sweet and sour taste?

Black Garlic has natural sweetness. In regular garlic, sweet taste does not come out, because the sulfur, which gives garlic the unpleasant smell and taste, suffocates the sweet taste. When the water evaporates with the sulfur, the natural sugar in Black Garlic shows up.
